I love bone marrow soup. I had never tried it before our "grass-fed transition" and my deep concern for how we raise our food. I discovered it by reading about an archeological dig wherein they found that a vast majority of the bones leftover from cooking were "broken into". Of course, I began to wonder what in the heck is inside of a bone that would be so valuable. Well, turns out that Bone Marrow is not only quite tasty but really good for 'ya too! So, I decided to hold off giving the bones from one of our butchered steers to the dogs and try them for myself. I had to ask the butcher to saw them so I could get to the Marrow. So, if those darn fellas spend all that time breaking bones open - they must have known something valuable was inside them.
I fix a big pot of bone marrow soup anytime I am sick or after having dental work. I really don't have any definitive data as to whether the bone marrow heals or not, just a hunch - which for me is a good enough excuse to make a great pot of soup. I begin by thawing out the bones, center cut shanks and some short ribs. These are my favorite cuts for bone marrow soup. Most people broil it or first boil it before using it on a steak. It has really good flavor, and can make a mean soup or stew base.
